Busy week aheadI am looking at a pretty hectic week and would appreciate your prayers.
Tomorrow night we are hosting the district ministers meeting and I have to cook some cajun food. I am thawing out chicken, sausage and shrimp as we speak so I can make the gumbo tonight. It always tastes better if it sits overnight. Also going to have chicken on a stick. That consists of boneless chicken, chunks of belle pepper and yellow onion scewered on a stick, seasoned, coated in milk and dragged through seasoned flour then it's all deep fried. I can hardly wait. It's my DH's specialty. We will have potato salad and coleslaw. Haven't settled on dessert yet. Too many choices.
Tuesday night we have a SAVE meeting which is a drug prevention program in our area.
Wednesday is church.
Thursday we are having a bar b que pork sandwich dinner at church.
I think I may be dead by Friday so I hope that day is open. LOL

Sounds like some pretty good eating. Maybe you need to figure on two more guests considering how my hubby loves that Cajun cookin'. (Just kidding so don't have a heart attack thinking there will be even more to cook for. )
You have a full schedule ahead of you. Be sure to check back by here and let us know how things go. I have a sneaky feeling you will be just fine come Friday.

Ended up going with jambalaya instead of gumbo. It was all very good but the chicken sticks were great. I also made an orange gelatin cake and an apple/peach dump cake. That one is really easy if anyone would like the recipe.

My mouth is watering just reading about what you decided to cook. Yep, I want the recipe. Please just post it here so other's can enjoy it also. Once it is posted, I will put a link over in the Recipe forum telling everyone it is here.

It is so simple. Coat a 9x13 baking pan with butter. Dump in 2 cans of your favorite prepared pie filling. Sprinkle a box of yellow cake mix over it all and drizzle with 8tbs of melted butter. Bake at 350 for 1 hour. Turn off the oven and let the cake rest in the hot oven for 15 minutes. Serve warm topped with canned milk or icecream.
